International Feast

Each term, Knoxville Campus Human Relations classes are presented with a special project: students must choose a country, anywhere in the world, and research it. They then teach their classmates about their country’s customs, culture, and history and at the end of the term, they have an international feast with a traditional dish representing each of their chosen countries. “It is our own trip around the world without leaving the comfort of home,” said Instructor Nikki Caldwell. This term the students enjoyed dishes like Latrice Cozart’s Colombian fruit salad; Sparkle Campbell’s Jamaican jerk chicken; and Stacy McKinney’s Spanish garlic mushrooms. There were many other dishes ranging from traditional green tea to hummus. While initially a little timid about some of the dishes, the students quickly recovered from this and left nothing but empty plates.
Nikki hopes that this will “encourage the students to keep open minds about other cultures and see we have more similarities than differences.” Nikki and the participating students would like to say a special thank you to the Knoxville Campus librarians. Without their help with research and the amazing databases they have obtained for us, these projects would not have been the incredible experience they were.
